The Fruit Cake Recipe
Taking inspiration form a certain famous Great Baking Programme we all share one, simplified, recipe for a fruit cake to test our baking skills.
After feedback from members in 2019, that the recipe was a little dry, 2022's schedule has a new recipe created by the queen of baking herself - Mary Berry! This recipe has the exact ingredients but a (very) simplified set of instructions to test your knowledge.
So ready ..... Set ..... BAKE!
Recipe for light fruit cake – Class 27

225g butter (room temperature) or vegetable spread, plus extra for greasing

225g caster sugar

4 large eggs

225g self-raising flour

100g ground almonds
-
1⁄2 tsp almond extract

450g mixed dried fruit

25g flaked almonds (optional)

Preheat the oven to 160°C (fan 140°C/325°F/Gas 3). Grease a 20cm (8in) tin.

Cream the butter or spread and sugar until fluffy, then add the eggs a little at a time.

Fold in the flour, ground almonds and extract. Fold the dried fruit into the mixture.

Spoon the mixture into the tin. If you like, sprinkle the surface with the flaked almonds.

Bake for one and a half to two hours. When the cake is done, remove from the oven and leave to cool.
